Veggie Meatball Soup - Easy Recipe

Veggie Meatball Soup - Easy (Semi-Homemade) Recipe

Ingredients:
1 Box of Chicken Broth
Clove of Crushed Garlic
Chicken Bullion cube
2-3 cups of Baby Kale and Spinach mix
Little tomatoes (I prefer baby heirlooms, but you can use grape or cherry tomatoes, too)
Celery
Carrot
Frozen Precooked Meatballs
Parmesan

Directions:
In a large pot pour the Chicken broth and start to boil. Add the cube of bullion and clove of garlic for flavor. Slice the carrot and celery into small discs and add to the chicken broth. Let boil for a few minutes. Add the frozen meatballs (I usually add about 6) and reduce to medium heat. Slice the little tomatoes in half and at that point your meatballs should be heated through. Reduce heat to low and add your sliced tomatoes and baby kale and/or spinach mix. The greens will look huge, but wilt quickly in the heat and take up very little room in your pot. Let cook for another minute or two and remove from heat.

Pour into two bowls and garnish with parmesan. Bon Appetite!

Serves two.
